Because water freezes at a higher temperature than does alcohol, the frozen portion of the mixture contains a higher concentration of water, and the liquid remaining therefore has a higher concentration of alcohol. Because of this, a layer of ice can be skimmed from the surface of beer (hence the name "ice" beer). The process is known as "fractional freezing". This Process Produces the Dry Crisp tasting beer, with a malty mid flavour. The beer itself is light, very light, but the flavour, if the beer isn¡¯t too chilled has a robust dryness. Closer to a Becks than a Heineken, and the absence of rice in the mix really shows through. Wheat Beer Two common varieties of wheat beer are witbier ("white beer") based on the Belgian tradition of using flavourings such as coriander and orange peel, and weissbier (German - "white beer") based on the German tradition of mixing at least 50% wheat to barley malt to make a light coloured ale. Both the Belgian witbier and the German weissbier were termed "white beers" because historically they were paler than other beers at the time. Harbin wheat beer pours clear and honey coloured in the glass. It has a medium white head and a very nice nose full of spicy hops and malt. The flavour tends toward sweetness but there is enough hops in it to keep that under control. It finishes with a really nice lager snap. Wheat beers are commonly marketed as spring or summer seasonal products. History The history of Harbin dates back to 1900, when Ulubulevskij, a Russian national, founded a brewery in Northeast China (called Manchuria then), which he named after himself - 'Ulubulevskij Brewery.' The initial objective of the Brewery, considered the first in China, was to supply Russians working on the Trans-Manchurian Railway Project5 started in 1898. In 1908, the company was renamed Gulunia. In 1932, the brewery was renamed 'Harbin Brewery Factory', when it went into joint control of Chinese and Czech nationals. Later, with the Soviet Red army capturing Manchuria in 1946, the company was controlled by Soviet nationals, who called it Quilin Stock Company Limited. This situation prevailed until 1950 when Stalin ordered the return of Chinese assets, and ownership was returned to the Chinese government. The Chinese renamed it Harbin Brewery and operated it as a state-owned entity. Driven by the famine the company became the first to brew beer with corn instead of rice, in China in 1959. Through the 1960s, the company focused on investing to improve its technology, and in 1973 it installed its first sterilization machine in Heilongjiang Province. In June 2003, SABMiller acquired a 29.6% equity stake in Harbin. In 2004 it was taken over by Anheuser-Busch after a bitter takeover battle with SABMiller.
